Health Benefits of Kale
Kale contains vitamins A, K and C, beta carotene, calcium, copper, manganese and potassium. It's a great source of fiber and antioxidants and is very low in calories. Kale contains compounds that are thought to play a part in in preventing the growth of certain cancers. Research also suggests that kale may help lower the risk of coronary artery disease. Kale may also help lower levels of bad cholesterol. A new study suggests that the more carotenoid-containing vegetables you eat, the brighter your outlook. Carotenoids are found in dark green and orange vegetables such as kale, sweet potatoes, carrots and collard greens.
