LENTILS & LOWER DIABETES RISK

Consuming more lentils and other legumes such as peas and beans may help lower the risk of type 2 diabetes, according to a recent analysis. The study included about 3,300 people who were at high risk for cardiovascular disease and type 2 diabetes. Researchers found that those people who ate the most legumes (about 3 servings per week), especially lentils, had a 35% lower risk of developing diabetes over four years than those who ate the least. Legumes are rich in potassium, magnesium, polyphenols and fiber, which are compounds and nutrients linked to better glucose metabolism and reduced risk of diabetes.
